Whipped feta dip

A super-quick cheese spread with garlic & jalapeños 


For Memorial Day, I needed something quick and easy to bring to a barbecue. Being a crazy person, I was also determined to bring something homemade. So when I ran across this seven minute garlic jalapeño whipped feta dip, I knew I'd found the one.

WHIPPED FETA DIP

WHAT YOU'LL NEED
8 oz. cream cheese, softened
4 oz. crumbled feta, softened
2 tsp fresh basil, roughly chopped 
2 tsp fresh parsley, roughly chopped
2 cloves minced garlic (1 tsp)
1 TBS red onion or 1 small shallot, roughly chopped
1 to 2 jalapeños, seeded and roughly chopped
1 TBS lemon juice
1 TBS honey
2 TBS red wine vinegar or apple cider vinegar
3 TBS olive oil
salt and pepper to taste

WHAT YOU'LL DO
In a food processor, combine feta and cream cheese and mix until smooth. Add all other ingredients and mix until smooth. Season with salt and pepper to taste. Serve at room temperature with cucumber slices, cherry tomatoes, and baguette slices.

Like I said: Pair with cucumbers and tomatoes and you're kind of healthy. Add a fresh baguette to the equation and you've got something super tasty — like an extra-special cucumber sandwich. Methinks we could use more of those in this world.
